Cooking 101 – Muesli Bars & Mexican Soup

Last night’s dinner (and today’s lunch) was my yummy Mexican Soup. Filled with veggies and vitamins everyone in my household seems to love it. And it’s so filling that you don’t need a second course. I like to sprinkle some shredded cheese on top as it melts into the soup and is a a delicious combination, plus just that little bit of extra calcium doesn’t hurt either. Mmm. 

Then there were muesli bars. I’ve been promising myself I’d make these for weeks now, maybe even months. The day finally came today where I went out and purchased the few ingredients I needed and made delicious and nutritious home made protein muesli bars.




3 cups oats

2 cups shredded coconut
walnuts (about 125g)
sunflower & pumpkin seeds (about 200g)
dried cranberries (about 400g)
dried prunes (about 300g)
3 heaped tablespoons protein powder of your choice
3 eggs
1/4 cup oil
1/2 cup honey

 Mix all the ingredients together, spread over a rectangular cake tin that has been covered in baking paper. Bake for about 20-25 minutes. Take out of the oven and allow to cool for about half an hour before cutting into desired pieces. These should keep in the fridge in a sealed container for up to a week (though I doubt they’ll last past Tuesday in my house). Makes about 20 cut up muesli bars depending on desired size.

So why are these so great? 
 – Protein, fibre and carbohydrate rich – eggs, protein powder, oats & prunes
 – Healthy source of good fat – nuts and olive oil
 – Antioxidants – cranberries and prunes
 – Excellent mid morning or mid afternoon snack – fill you up and curb sugar cravings
 – No added artificial sugar – honey only & shredded coconut
 – Nutritious dessert option or sweet snack to go with the morning cuppa
 – Great snack after a long run where you need a combination of carbs and protein to restore energy levels
 – Ideal breakfast on the go when you’ve slept in or rushing off to a morning meeting (just make sure there’s no oats or dried prunes stuck in your teeth)
You can swap the ingredients for ones that you like including almonds, pecans, sultanas, pureed apple, mashed up banana, chia seeds, flaxseeds, almond meal and so much more.
