Once upon at time I deprived myself. A lot. I wanted to lose weight, get fitter, stay healthier. The deprivation and restriction of low carb or low fat diets was driving me crazy so I stopped. A few years ago a post workout meal would have been a protein shake or a banana; and while I am a fan of protein shakes to some degree, after a long run I want to eat something more solid, more nutritious, more tasty. The moment I stopped paying attention to carbs and fat intake and started to enjoy my meals again I lost those last few stubborn kilograms, gained energy and enjoyed everything about fitness a lot more.
Today I made curried rice with vegetables. I like simplicity after my runs. It doesn’t get any simpler than this.
My Yummy Curried Rice & Vegetables
2 cups of rice
700g frozen vegetables
Curry powder
Herbs and spices
1 tbsp oil
Method
Boil the rice. Stir fry the vegetables in a large pan, once they are soft add the cooked rice and mix everything together. Mix two or three teaspoons of curry powder in half a cup of water and pour into the rice and vegetables. Mix well on low heat. Season to taste, and serve. For a protein boost add a serving of chicken breast, fish or prawns.
This makes enough food to last for two or three days depending on whether you are dining alone, eating it for lunch and dinner or leaving it for a post workout meal.
